Fall means one thing in the kitchen….and that’s comfort food.

When I was growing up, my mom used to make my absolute favourite dish every Fall; Stuffed Tomatoes and Peppers. It’s just one of those foods that reminds you of home.

This recipe works best with fresh ingredients, especially fresh ground beef. Thank you so much to Nelson Farms for a next level quality ground beef that not only elevated this recipe (trust me, my cooking skills needed it) but really reminded me of home.

Prep time is about 30 minutes…cutting and scooping out tomatoes and peppers,  preparing the stuffing….and about 10 minutes of intermittent wine drinking (obviously)!  A good qualify ground beef is a must….and of course, big and juicy tomatoes and green peppers straight from the garden.

Hope you like the dish as much as I loved it growing up……and hope it  gives you those warm fall fuzzy feelings.

 

RECIPE:

What you need:

Stuffed Peppers

Stuffed Tomatoes

Olive oil

1 lb Ground Beef

1 Chopped Onion

3 cups instant rice

1 1/2 cup water

1 Can peeled plum tomatoes

1 Can Tomato juice

Salt.

Pepper.

Garlic powder.

Dill.

Directions:

  1. Cut tops off of peppers and tomatoes and place in large dish pan- keep all the insides of the tomatoes in a large bowl and discard the insides of the peppers
  2. Chop your onions and dill into fine pieces
  3. Add can of peeled plum tomatoes to large bowl of tomatoes and mash them up
  4. Heat up large pot on stove and add olive oil, onions and ground beef – mix it up
  5. Add in large bowl of crushed tomatoes, half a can of tomato juice, rice, dill, salt, pepper, garlic powder – STIR
  6. Let that cook on medium for about 10 minutes
  7. Pour sauce in each pepper/tomato
  8. Cover peppers/tomatoes in olive oil and the rest of the tomato juice can. Cover with tin foil.
  9. Put in oven for 350 degrees for 45 minutes.
  10. Broil last 10 minutes until brown.
  11. ENJOY!
